Deliciously unique brownie waffles that merge the joys of breakfast with the decadence of brownies, perfect for any occasion.

Ingredients

  • 1 heaping tablespoon peanut butter (sugar-free)
  • 1 large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monk fruit sweetener (optional)
  • 1 pinch salt
  • 1.5 tablespoons sugar-free semi-sweet chocolate chips (divided)
  • 1-2 teaspoons water (as needed)

Instructions

  1. Preheat your mini waffle maker according to the manufacturer’s instructions.
  2. In a small mixing bowl, combine the creamy peanut butter, the egg, cocoa powder, a pinch of salt, monk fruit sweetener (if using), and 1 tablespoon of semi-sweet chocolate chips.
  3. If the mixture is too thick, add 1-2 teaspoons of water to achieve a stir-friendly consistency (avoid making it runny).
  4. Pour half of the batter into the waffle iron and sprinkle with half of the remaining chocolate chips.
  5. Cook for 2-3 minutes, or until no steam escapes from the machine.
  6. Carefully remove the waffle and repeat the process with the rest of the batter and chocolate chips.

Notes

Serve warm with sugar-free chocolate sauce, Greek yogurt, or fresh berries. Freeze leftovers for later use and reheat in a toaster or microwave.
