A comforting chicken burrito casserole combining shredded chicken, rice, beans, corn, and cheese, baked to perfection for a family-friendly meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • Tortilla chips (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a casserole dish.
  2. Combine in a large mixing bowl the shredded chicken, cooked rice, black beans, corn, salsa, and taco seasoning. Stir until everything is evenly coated.
  3. Spread half of the mixture in the bottom of the greased casserole dish.
  4. Layer half of the shredded cheese over the first filling layer.
  5. Repeat with the remaining mixture and remaining cheese.
  6. Bake for 20–25 minutes until the cheese is melted and bubbly.
  7. Remove from the oven and dollop sour cream on top before serving. Top with tortilla chips if desired.

Notes

For a lighter option, use Greek yogurt instead of sour cream and reduce cheese. Ensure to drain and rinse beans to reduce sodium.
