Cilantro-Lime Chicken Thighs

Juicy, marinated chicken thighs with bright cilantro and lime flavors, perfect for grilling or baking.

Ingredients

  • 4 chicken thighs (bone-in, skin-on preferred)
  • 1/4 cup fresh cilantro, finely chopped
  • Juice of 2 limes (about 23 tablespoons)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Whisk together the chopped cilantro, lime juice, olive oil, minced garlic, cumin, salt, and black pepper in a medium bowl until evenly combined.
  2. Add the chicken thighs to the bowl (or use a zipper bag) and turn each piece so it’s fully coated in the marinade.
  3. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  4. Preheat your grill to medium-high or the oven to 375°F (190°C).
  5. Grill for approximately 6–7 minutes per side or bake for 25–30 minutes until the thickest part reads 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving.

Notes

For extra citrus aroma, add lime zest. Adjust salt to lower sodium content. Can substitute fresh cilantro with parsley.
