Tender and moist quick bread bursting with sweet-tart blueberries and a creamy texture from cottage cheese.

Ingredients

Scale
  • 1 cup cottage cheese
  • 2 cups all-purpose flour (about 240 g)
  • 1 cup fresh blueberries
  • 1/2 cup sugar (about 100 g)
  • 1/2 cup milk (about 120 ml)
  • 1/4 cup vegetable oil (about 60 ml)
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Mix together the cottage cheese, sugar, milk, oil, eggs, and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, and salt until evenly distributed.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the blueberries gently.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

For cleaner slices, chill the loaf for 30 minutes before slicing. If using frozen blueberries, fold them in straight from the freezer to prevent color bleed.
