Instructions

  1. Prep the ingredients: Gather and measure everything—dice the onion, mince the garlic, slice the mushrooms, chop the spinach, and have the cottage cheese ready.
  2. Sauté onions and garlic: In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft (about 3–4 minutes).
  3. Cook the mushrooms: Add sliced mushrooms to the skillet and cook until they release their juices and become tender (5–7 minutes), stirring occasionally.
  4. Wilt the spinach and season: Stir in chopped spinach, salt, pepper, and thyme. Cook for another 2–3 minutes until the spinach is wilted.
  5. Finish with cottage cheese off heat: Remove skillet from heat and stir in cottage cheese until well combined.
