Soft, chewy, and protein-rich cottage cheese cookies that make for healthy snacking.

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment.
  2. In a mixing bowl, add cottage cheese, oats, almond flour, honey or maple syrup, vanilla, baking powder, cinnamon, and salt.
  3. Stir until the mixture is evenly combined; the batter will be moist and slightly lumpy.
  4. Fold in chocolate chips if using.
  5. Drop tablespoon-sized spoonfuls onto the prepared sheet, spacing them about 1.5 inches apart.
  6. Bake for 12–15 minutes or until lightly golden.
  7. Let the cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack.

Notes

These cookies are great warm and can be paired with nut butter or yogurt.
