A cozy one-skillet dinner featuring tender steak, cheesy tortellini, and a creamy garlic-Parmesan sauce, ready in under 30 minutes.

Ingredients

  • 8 ounces cheese tortellini (fresh or refrigerated)
  • 1 pound steak (sirloin or ribeye), trimmed and cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the cheese tortellini according to the package instructions. Drain and set aside, reserving a couple tablespoons of pasta water.
  2. Heat a large skillet over medium-high. Add olive oil and let it shimmer.
  3. Season the steak pieces with salt and pepper. Add to the skillet in a single layer, searing until brown on all sides, about 5–7 minutes total. Remove steak to a plate.
  4. Lower heat to medium and add the minced garlic to the skillet, cooking for 30–60 seconds until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer, scraping any browned bits from the pan.
  6. Remove from heat, stir in the Parmesan until melted and the sauce thickens slightly. If too thick, add a splash of reserved pasta water.
  7. Return the steak to the skillet and add the cooked tortellini. Toss gently to coat and warm through.
  8. Taste and adjust seasoning with salt and pepper, then garnish with fresh parsley and serve immediately.

Notes

For a lighter sauce, use half-and-half instead of heavy cream. Consider a gluten-free version with gluten-free tortellini.
