Golden-skinned chicken drizzled with hot honey and topped with tangy crumbled feta, this dish combines comforting flavors with a daring twist.

  • 2 boneless, skinless chicken breasts (about 1 to lb total)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup hot honey
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and position a rack in the center.
  2. Pat the chicken breasts dry with paper towels, then rub both sides with salt, pepper, and paprika.
  3. Heat the olive oil in an ovenproof skillet over medium-high heat until shimmering.
  4. Add the chicken and sear without moving for 4–5 minutes until a deep golden crust forms; flip and sear the other side for another 4–5 minutes.
  5. Transfer the skillet (or move the chicken to a baking dish) and arrange breasts in a single layer.
  6. Drizzle the hot honey evenly over each breast.
  7. Sprinkle the crumbled feta over the chicken, covering as much surface as you like.
  8. Bake for 20 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for 5 minutes, then garnish with chopped fresh parsley and serve.

Notes

For a dairy-free option, substitute feta with a tangy almond feta or omit it and add a squeeze of lemon at the end. Store leftovers in an airtight container for up to 3–4 days.
