A comforting one-dish bake featuring juicy chicken breasts, tender zucchini, and sweet cherry tomatoes topped with gooey mozzarella.

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange the chicken breasts in a large baking dish.
  2. Sprinkle the chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Drizzle olive oil over the chicken and rub to coat.
  3. Layer the sliced zucchini and halved cherry tomatoes on top of the chicken breasts.
  4. Sprinkle shredded mozzarella cheese over the dish and cover with foil.
  5. Bake covered for 25–30 minutes, then uncover and bake for an additional 10–15 minutes until chicken is cooked through.
  6. Let the bake rest for a few minutes before serving.

Notes

For a lighter option, use part-skim mozzarella. If zucchini is large, use only the firm outer slices.
