A light and airy bread made with Greek yogurt and egg whites, perfect for low-carb and keto diets.

  • 1 cup Greek yogurt (full-fat)
  • 4 large eggs (separated)
  • 1/2 cup cream cheese (softened)
  • 1 tbsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
  2. Carefully separate the eggs, ensuring no yolk gets into the whites.
  3. Using an electric mixer, whip the egg whites until stiff peaks form.
  4. In another bowl, combine the egg yolks, Greek yogurt, and cream cheese, beating until smooth.
  5. Gently fold in the baking powder and salt to the yolk mixture.
  6. Carefully fold in the whipped egg whites, maintaining airiness.
  7. Pour the batter into the prepared loaf pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool slowly in the turned-off oven with the door slightly ajar.

Notes

Ensure egg whites are free from yolk for optimal fluffiness. Don’t rush the folding process to maintain light texture.
