A quick and flavorful stir-fry featuring tender chicken cooked with garlic and bell pepper, tossed with zucchini noodles for a light, low-carb meal.

  • 2 medium zucchinis, spiralized into noodles
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Prep your ingredients: Slice the chicken into thin strips, spiralize the zucchinis into noodles, mince the garlic, and slice the bell pepper.
  2. Sauté the garlic: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Cook the chicken: Add the sliced chicken breast to the skillet and cook, stirring, until no longer pink, about 5–7 minutes depending on thickness.
  4. Add the bell pepper: Stir in the sliced bell pepper and cook for another 2–3 minutes until tender-crisp.
  5. Finish with soy sauce and zucchini noodles: Pour in the soy sauce and stir to coat the chicken and peppers. Add the zucchini noodles and cook for an additional 2–3 minutes until just tender. Season with salt and pepper to taste and serve hot, garnished with sesame seeds and green onions if desired.

Notes

For variation, add a pinch of red pepper flakes for heat or a squeeze of lemon for brightness. Adjust cooking time to prevent zucchini from becoming mushy.
