A rich and savory skillet meal combining browned ground beef, caramelized sweet potatoes, and bright bell peppers, perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced (about 1/2-inch cubes)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onion and minced garlic to the skillet and sauté until softened, about 3–4 minutes.
  3. Add 1 lb ground beef to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in the diced sweet potatoes and bell pepper, then season with 1 teaspoon paprika, salt, and pepper to taste.
  5. Reduce heat to medium-low, cover the skillet, and cook until sweet potatoes are tender, about 15–20 minutes.
  6. Remove the lid, taste and adjust seasoning, then garnish with chopped fresh parsley if desired. Serve warm.

Notes

For a spicy version, add red pepper flakes to the mix. This dish is great for meal prep, keeping well in the fridge for several days.
