Healthy Turkey Sloppy Joes

A lighter version of classic sloppy joes made with lean turkey and lots of vegetables, served on whole-wheat buns.

Ingredients

  • 1 pound ground turkey (lean, 93% or 95% preferred)
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1/4 cup tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard (Dijon or yellow)
  • Salt and pepper to taste
  • Whole wheat hamburger buns
  • Optional toppings: shredded lettuce, sliced avocado, or cheese (cheddar or pepper jack)

Instructions

  1. Heat a large skillet over medium heat. Add the ground turkey and break it up with a spatula. Cook until browned and no longer pink, about 6–8 minutes.
  2. Add the diced onion and bell pepper to the pan. Sauté until softened and translucent, about 4–5 minutes.
  3. Stir in the minced garlic and cook another 30–60 seconds until fragrant—don’t let it burn.
  4. Pour in the diced tomatoes and tomato sauce. Stir to combine.
  5. Add the Worcestershire sauce, brown sugar, mustard, and a pinch of salt and pepper. Taste and adjust—start with 1/2 teaspoon salt, then add more if needed.
  6. Reduce heat to low and simmer uncovered for 10–15 minutes, stirring occasionally, until the mixture thickens and the flavors meld.
  7. Toast the whole wheat buns if you like. Spoon the sloppy joe mixture onto buns and add optional toppings such as avocado slices, lettuce, or a sprinkle of cheese.

Notes

This dish is flexible; you can easily double the recipe for meal prep or transform the filling into bowls or lettuce wraps. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
