Korean BBQ Meatballs Sheet-Pan Dinner

A savory and sweet one-pan dinner featuring tender Korean BBQ meatballs roasted with sweet potatoes and Brussels sprouts.

Ingredients

  • 1 pound ground beef or pork
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 egg
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Sweet potatoes, cut into cubes
  • Brussels sprouts, halved

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Combine the ground meat, green onions, garlic, ginger, soy sauce, brown sugar, sesame oil, egg, breadcrumbs, salt, and pepper in a bowl.
  3. Shape the mixture into evenly sized meatballs and place them on the prepared baking sheet.
  4. Toss the sweet potatoes and Brussels sprouts in olive oil, salt, and pepper, then spread them around the meatballs.
  5. Bake for 20–25 minutes until the meatballs are cooked through and the vegetables are tender.
  6. Serve hot with your preferred sides.

Notes

For a spicy version, stir in 1–2 teaspoons of gochujang or sriracha to the meat mixture. You can also serve with a creamy spicy mayo dip on the side.
