Ingredients

Scale
  • 4 medium sweet potatoes (about 1.52 pounds total)
  • 1 lb (450 g) ground turkey
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 small onion, diced (optional)
  • 1 clove garlic, minced (or 1/2 tsp garlic powder)
  • 1 tsp chili powder (adjust to taste)
  • 1/2 tsp ground cumin (optional)
  • Salt and black pepper to taste
  • 12 tbsp olive oil or neutral cooking oil
  • Toppings: sour cream or Greek yogurt, chopped green onions, diced avocado, cilantro, lime wedges, salsa, or hot sauce

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment.
  2. Wash the sweet potatoes and prick each several times. Rub with oil and roast for 45–60 minutes, until tender.
  3. Heat 1 tbsp oil in a skillet over medium heat. Add diced onion and sauté for 3–4 minutes. Add ground turkey and cook until no pink remains, about 6–8 minutes.
  4. Stir in minced garlic, black beans, chili powder, cumin, salt, and pepper. Cook for 2–3 minutes.
  5. Remove potatoes from the oven, let cool for 5 minutes. Cut each potato lengthwise and scoop out some flesh.
  6. Spoon the turkey-bean mixture into each sweet potato half. Sprinkle with shredded cheese.
  7. Return to the oven and bake for another 8–10 minutes, until cheese is melted.
  8. Top with sour cream, green onions, avocado, cilantro, and lime juice. Serve hot.
