Bright, crunchy Thai chicken wraps filled with savory shredded chicken, crisp vegetables, and a creamy peanut sauce, perfect for a quick meal or packed lunch.

  • 2 cups cooked chicken, shredded (rotisserie or poached)
  • 1 cup shredded cabbage (green or napa)
  • 1 cup shredded carrots
  • 1 bell pepper, thinly sliced (any color)
  • 1/4 cup green onions, chopped
  • 4 large tortillas or wraps
  • 1/2 cup creamy peanut sauce
  • Salt and pepper to taste

Instructions

  1. Combine shredded chicken, cabbage, carrots, bell pepper, and green onions in a large bowl.
  2. Season the mixture with salt and pepper; toss gently to combine.
  3. Lay each tortilla flat on a clean surface.
  4. Spread a generous amount of peanut sauce across the center of each tortilla.
  5. Divide the chicken-and-veg mixture evenly among the tortillas.
  6. Roll each tortilla tightly, tucking in the sides, then slice each roll in half on the diagonal.
  7. Serve immediately, or wrap each half in foil for meal prep.
