  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 cup cooked brown rice or quinoa
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • Salt and pepper to taste
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Prep: Cook 1 cup of brown rice or quinoa according to package directions.
  2. Cook: Heat a skillet over medium heat, add oil, season chicken, and cook until browned and cooked through, about 6–8 minutes.
  3. Make: In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth.
  4. Sauté: In the same skillet, add more oil if needed, toss in vegetables, and cook until tender-crisp, about 4–5 minutes.
  5. Combine: Return chicken to skillet, pour peanut sauce over, and stir to coat. Cook for another 1–2 minutes.
  6. Serve: Spoon over warm brown rice or quinoa and garnish with peanuts and cilantro.

Notes

For a vegetarian option, swap chicken for firm tofu. Adjust seasoning based on dietary preferences.
