A delicious and versatile homemade granola that’s perfect for breakfast, snacks, or as a topping for yogurt and smoothies.

Ingredients

  • 3 large egg whites
  • 0.25 cup pure maple syrup (60mL)
  • 2.5 teaspoons ground cinnamon
  • 2 cups crisp brown rice cereal (60g)
  • 1.5 cups old-fashioned rolled oats (150g)

Instructions

  1. Preheat your oven to 325°F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
  2. In a large bowl, whisk the egg whites until they’re broken up and slightly bubbly.
  3. Add the maple syrup to the bowl and whisk until combined.
  4. Mix in the cinnamon, ensuring there are no clumps.
  5. Gently fold in the brown rice cereal and rolled oats, making sure everything is evenly coated.
  6. Spread the mixture out onto your prepared baking pan.
  7. Bake for 20 minutes, then gently stir the granola to move clusters around and prevent burning.
  8. Bake for an additional 10 minutes, then stir again. Continue baking for another 4-8 minutes until crunchy.
  9. Let it cool for 5 minutes before breaking apart any giant clusters. Allow the granola to reach room temperature on the pan before storing it in an airtight container.

Notes

Store your homemade granola in an airtight container at room temperature for about 2-3 weeks. You can freeze portions to extend its shelf life.
